These virgin carbon blades are not only incredibly sharp, they are lightweight and durable. Jonathan has been using this knife daily for almost 20 years because he knows that he won’t find a sharper knife on the market. One sided sharpening and ancient Samurai sword-making techniques are applied in the making of these artisan kitchen tools. We import these directly from Japan and sell to top chefs across the country.
