Local Farmers and Local Ingredients

We take pride in the quality of our ingredients, some of which are cultivated on the farm at Los Poblanos. Our menus consistently feature food by the following local farmers:

Shepherd’s Lamb – Certified organic grass-fed lamb is produced by the Manzanares family ranch in the mountains of Northern New Mexico. The flock grazes on lush native grasses (wheat grass, grama and fescues) and their favorite shrubs such as mountain mahogany and snowberry giving them their hallmark delicate taste.

ARCA Organics – Nestled on two parcels of prime Rio Grande Valley farmland, ARCA Organics grows certified organic vegetables and fruits in Corrales, NM. Their organic agricultural practices provide employment for people with developmental disabilities and quality food for the community.

Old Monticello Farms – 16-year traditional balsamico made in the historic village of Monticello New Mexico, using sustainable and artisanal practices. Read about Monticello Balsamic as featured in Edible Santa Fe.

Los Poblanos cuisine is rooted in what comes from our farm as well as the region.

We are lucky to have Valley Flowers Farm and their animals on our property. Started as a 4H project, the Chavez family continues to raise their Nigerian Dwarf goats, Nubian goats, a huge variety of chickens and Duroc pigs who provide constant entertainment and joy for our visitors and guests. Weekly Barnyard Animals 101 classes are offered Saturdays (11am-noon) and offer the chance to find out more about raising your own animals. Other Favorite Farms: Skarsgard, Toad Road Farm, Chispas Farms, Amayo Farms, Old Windmill Dairy, Sweetwoods Dairy, Heidi’s Organic Raspberry Farm, Vida Verde, and Green Tractor Farm.

Chickens
