Plan to join  us just before dinner  for a discussion and tasting of New Mexico’s own  traditional Aceto Balsamico of Monticello New Mexico, aged now for 16 years on 7 rare woods.  No other maker  outside of Italy is doing this.

 Steve and Jane Darland  of Old Monticello Organic Farms will teach you what  to look for in topmost balsamic,  first by explaining the difference between  traditional  and industrial  (the latter being  99%+ of what people  buy and use). 

 You can taste the oldest balsamic alone and with food – and build your own expertise.  This is a perfect prelude to dinner – yet there is no purchase necessary. The Farm Shop at Los Poblanos is the exclusive  area retailer. This is a free event, but dinner charges are additional. Please indicate your preferred reservation time in the sign up form below.
